Rotisserie Chicken to the Rescue

My 20 x 20' garden is planted! And I'm exhausted, so tonight, rather than cook, I'm going to indulge in a grocery store rotisserie chicken. I love, love, love rotisserie chicken. It's so versatile. I've made main meal salads, casseroles, chicken salad, sandwiches and wraps, and all things Mexican, including tacos and burritos. But my favorite way to eat a rotisserie chicken is just the way it is -  hot, juicy, perfectly roasted. Another tasty treat is a good, crusty bread, spread with butter, heaped with chicken, and salted and peppered. Yum. I can hardly wait to dig in.

I really think Sam's Club makes a wonderful rotisserie chicken. I'm pretty sure they use Lawry's Seasoned Salt, one of my go-to seasonings. I've also heard that Costco has one of the best out there, but I'm not a member and can't comment.

A rotisserie chicken and a salad. It doesn't get much better than that!

Deb, a 20 x 20 garden is impressive! You deserve a break after all that work. Your ideas for making the most of a rotisserie chicken were really good, very tasty. Thanks for sharing! By the way, re: gardening, my sunny space is so tiny that I'm thinking of buying one of those clay pots with the "pockets," and planting dill, chives, parsley and basil all in one pot. And I won't bother with tomatoes this year, since last year's entire harvest was only three. :-(

I hope the weather is good this Summer for your garden. I love tomatoes out of the garden. I also love rotisserie chickens. I like Stop and Shop's. I eat it that way then make chicken salad for a sandwich or two. Also try to get enough out of it for chicken divan. It's a great way for a person living alone. Yum, yum.

We don't have Stop and Shops so I can't compare. I've never made chicken divan, but now I will.

Congrats on your garden, Deb! I am impressed. I love rotisserie chicken and I can tell you that Costco does a good one. Not sure if our Canadian version is the same as yours, but it's yummy. I enjoyed this post. And now I'm hungry.

I just went out and bought a rotisserie chicken for myself..Pulled some skin off before I put it away.. I just couldn't resist eating some while it was hot.
