Love That Mac and Cheese

by Deb Baker/Hannah Reed

Snow is falling and tonight the fire will be crackling. Now all I need to complete the picture is a big bowl of mac and cheese. Boxed or homemade, I love it all. But I’m a purist. Don’t you dare add cauliflower or shrimp or peas or…well…Maine lobster might work…or bacon. No really, I like my pasta and cheese without any foreign objects.

Give it to me with Velvetta or Brie, Cheddar or Parmigiano, or add three or four kinds. Give it to me with Cheese Whiz or Gouda or Ricotta. I love them all.

Creamy golden on the inside, crisp and crunchy on the top. Yum.

And some day down the road, when they finally come and take me away to the old folks home, I better get my mac and cheese, or else. Just saying.

And how do you like yours?

I adore mac and cheese..in fact I plan on having some for lunch! I admit-I sometimes enjoy adding bacon...or Frank's Hot Sauce, but plain is just fine too!

The only thing we add is some finely chopped onion. I like the flavor it gives. But other wise, lots of pasta and cheese please!!

We had mac 'n' cheese for Sunday dinner. It's a huge family favorite and the dish my grandkids request when it's their birthday celebration. The current favorite is Martha Stewart's "Perfect Mac 'n' Cheese", but I am content with my Mom's recipe or any other home cooked from scratch recipe - not so much with boxed kinds and powdered cheese product.

Mmm that pic looks good! I eat my macaroni with cubes of ham and some dutch "bread-meat" and minced meat, some herbs and sometimes baked mushrooms. And when it is finished, lots of cheese on top!
