I'm waffling ...

by Lorraine Bartlett / Lorna Barrett / L.L. Bartlett

Mr. L and I have been talking about waffles for a L-O-N-G time. We keep saying, "We ought to have waffles this weekend," and then we don't.

I used to be a half-hearted pancake girl, but when Mr. L and I got married, he convinced me that waffles were better. (And it didn't take much persuasion.) I don't like "damp" food. Think bread pudding or trifle. When you pour the syrup (and it MUST be REAL maple syrup, not the fake corn-syrup kind with wimpy maple flavor), pancakes get wet and mushy.

But waffles ... waffles are crisp and stand up to syrup. (At least the way we make them.)

I don't like aberrations--with fruit, chocolate, or anything else in the waffle. It's got to be the real (and plain) kind. And I prefer to have bacon on the side. Nice crisp bacon!  (I feel like Pavlov's dog just thinking about the combination.)

But today isn't going to be waffle day. Neither will tomorrow, and not Sunday, either. (We watch Sunday Morning on CBS and there's too much work and clean up to get breakfast in by 9 am.)  I was thinking we might want to have them for supper one night, since we don't seem to be able to wedge them into our morning schedule(s).

So, when and how do YOU like your waffles?
