    Summer Fruit

    Michele Scott Icon

Today’s blog will likely be the most frivolous blog you’ve ever read. It’s about summer fruit. Yes–summer fruit. I love it! i love the taste of peaches, nectarines, and plums. I especially like the red plums, oh and apricots. We have a bowl full of them right now–so sweet and juicy that you have to eat them over the sink. And, what about the berries you can get during the summer? Strawberries go so fast around here that I can barely make it through the front door without people picking them out of the bag and getting started. And, strawberry shortcake–now who doesn’t love it? Raspberries–there is a delicate, sweet fruit and such a pretty color too. Told you this would be frivolous. How about blackberries? My grandma in Oregon lives against the Cascades (in a town called Sodaville–yes, it really is called that) and a ton of wild blackberries grow along her dirt road. The memories of walking up that road and picking off the bush and eating them are some of my fondest. God, there are days I really miss being a kid. Grandma would can those blackberries and we’d have jam and what ever other treat she’d make us. YUMMY!

And, what about tomatoes and avocados? Both fruit! Mix in some jalapeno, cilantro, onion and viola! Guacamole. Pass the Tostitos please. I think I hear a margarita calling me. Oh no, it’s only Monday.

And, how about the number one summer fruit? You know the one we all take a bite out of on Independence Day! Yep–watermelon. Who doesn’t love the memories that watermelon conujre up?

I truly do love summer fruit. I’d love to know what you’re favorite thing about summer is, and if you have any yummy fruit recipes.

Here’s an easy and fun breakfast recipe.

Two pieces of bread (I like to use sweet bread for this)
a handful of berries (you’re favorite) (or any summer fruit really works fine)
    goat cheese
    Honey (optional)

Butter outside of bread, spread goat cheese in center, sprinkle berries over the cheese and sprinkle with honey, grill on med. heat for a couple of minutes on each side. This is so yummy and easy. I made it for my dad for Father’s Day and he loved it. Hope you enjoy.

    Cheers,
    Michele

    1. Michele, I’m right there with you on fresh, summer fruit. I have GOT to figure out how to grow rhubarb in Texas; I know it must be possible. My parents, who live in Connecticut, and are in their 70s, have the same rhubarb patch that belonged to my grandmother who would be 110 years old if she were alive!! It’s so hard to grow yummy fruits & veggies in my Texas garden, however I continue to try and I compost too. Last week we discovered that a very tall strange thing that was growing in a corner of our small back yard is a peach tree and we have the juiciest peaches growing from it. It must have come from a peach pit when we composted at some time. And we didn’t even try. Go figure!!

    2. I LOVE summer fruit. I was binging in June on bing cherries. Yum. Now, the plums are rich and dark and ripe and the peaches and nectarines are juicy. And, berries—-yummy blackberries, blueberries, raspberries, strawberries. Ahhhh—–summer.

    3. My favourite is a recipe called ‘Summer Pudding’!

Stew together as many summer fruits as you wish - traditionally it tends to be forest fruits, so whatever mix of raspberries, strawberries, blackcurrants, redcurrants that you wish. Add sugar to sweeten (according to the tastes of your family/friends). Line a basin or glass bowl with slices of white bread (crusts cut off). Pour in the stewed fruit mix, and put a slice or two of bread on top. Weigh down the whole mix with a plate or whatever. Leave overnight until the fruit juices have sunk into the bread.

When ready, turn upside down if feeling brave. If not, just serve it out of the bowl! Serve with dollops of fresh cream or fromage frais or whatever you like…

For those people with delicate consciences, remember that the quantity of Vitamin C etc that you consume from the fruit far outweighs the minimal amount of starch or fat in the bread or cream!!!

      Enjoy!
